Using Green Tomatoes

There alway seems to be green tomatoes on the vine at the end of our high desert gardening season. Doing a bit of cooking research I came up with a great way to cook them with eggs. Below you will find some photos along with what I did.
(I am preparing a video on how to ripen your tomatoes.)

Eggs & Fried Green Tomatoes

1. Cut the tomato long ways and remove the middle meat. You can dice this if you want, mine went into the compost bin.

2. Sauté tomatoes in medium to high heat in a pan of olive oil, black truffle salt and leeks. 
Cook 5 to 7 minutes on each side, until they are tender. 

3. In a bowl mix eggs, seasonings of your choice and parmesan cheese, pour mixture in to the middle of the cooking tomato circles.

4. Cook the eggs long enough so they won't fall apart when turning.
